200 g Wheaty VEGANSAUSAGE Hot Dog or Tiny Hot Dogs
1 cucumber
200 g soya yoghurt (plain)
1 lemon
½ tbsp olive oil
4 basil leaves
¼ tsp freshly chopped mint
salt and pepper
4 head lettuce leaves
8 slices of white bread (toasted)

 

Wheaty cucumber curd

Cut the sausages into evenly sized slices.

Wash the cucumber and coarsely grate, remove some of the fluid.

Cut the basil leaves into fine strips and mix with the olive oil.

Fold in the lemon juice, oil and the sausage slices into the soya yoghurt. Season with salt and pepper.

Place onto the lettuce leaves and serve with toasted slices of white bread.
