Fruit salad:
A variety of fruit (for example: banana, mango, kiwi, pineapple, starfruit, apples, grapefruit)
Rum

Pastry / biscuits:
2 cups of flour
½ tsp dried yeast
6 tbsp maple sirup
½ cup sugar cane juice
2 sweet bananas
1 tbsp cardamom, ground
1 tbsp ginger powder
1 tbsp cinnamon
½ tsp sea salt
1 cup sunflower oil
½ cup of coconut milk
2 tbsp olive oil

 

Fruit salad with Cape Malay Koeksisters

This is a South African desert. Koeksisters derives from the Afrikaans or Dutch word “koek” (= cake) and “sissen” (= deep-fry). A Koeksister is usually eaten as a sweet dessert or as a little snack. After deep-frying the pastry can be drawn through cold sugar sirup and can be sprinkled with coconut flakes.

To prepare the fruit salad, cut all the fruit up into small bits and let it draw through the rum.

For the biscuits, mix all the ingredients into a smooth dough. The dough should not stick to your hands. Let the dough rise in a warm place for an hour or two. Then roll out the dough on a floured surface (make sure, that the dough is about 1,5cm thick) and cut out small squares and triangles. Alternatively you can also roll it up and cut it into slices. Heat up some fat in a pot and bake the Koeksisters until they turn out golden brown (also turn the Koeksisters every once in a while). When finished, let the biscuits drain.
