5 cocktail glasses

1 lb. firm, ripe pears
1 honeydew melon
½ cup chopped red onions
¼ cup chopped coriander
1-2 chili peppers
3 tsp sugar
1 pinch of salt
1 lemon

 

A Christmas salad: Ensalada de Navidad

The colours represent the Mexican flag and the typical seasonal Christmas colours!

Begin with peeling the pears, deseed and cut into small cubes. Cut the melon into slices, separate the fruit pulp from the shell (don’t forget to deseed!) and chop into small cubes. Chop the chili peppers up (and also deseed!).

Mix all the ingredients above with two tablespoons of sugar and put into a jar with a lid. Make sure to let it rest in a cool place for about 2 hours.

Rub in the edges of the cocktail glasses with a halved lemon, spread some sugar on a flat plate, place the cocktail glasses upside down on to the sugar and twist the glasses. Finally dish the Christmas salad into the cocktail glasses. It’s ready to serve straight away!
