1 packet Wheaty VEGANSLICES Red Bell Pepper 4 large slices of wholemeal bread some baby spinach leaves 250 g white tofu 1 small shallot 1 small clove of garlic 10 ml cider vinegar a dozen fresh basil leaves 1 tbsp chives ½ tsp salt pepper olive oil

Cut the tofu into cubes and purée in a mixer together with some salt. Then add the cider vinegar, pepper, garlic and shallot and mix again until the mixture is nice and creamy. Chop up the basil and add to the tofu mixture and fold into the cream cheese mixture.
Spread the cream cheese on the slices of toasted bread.
Halve the VEGANSLICES and alternately place some spinach and some slices on the bread.
