400 g VEGANSAUSAGE Mini-Herby
500 g sauerkraut
2 tbsp sunflower oil
1 onion
vegetable stock
1 apple
2 laurel leaves
4 juniper berries
2 potatoes
1 tsp sugar
salt
Wash the sauerkraut and pull it apart. Peel the onions and cut into thin slices. Heat up the oil.
Lightly braise the onions, laurel leaves, juniper berries and the sauerkraut. Pour on some vegetable stock, peel the apples, dice them and add them to the sauerkraut. Steam for 25-30 minutes.
Wash the potatoes and peel them, then grate them finely and fold into the sauerkraut. Let the dish cook again briefly. Season with sugar and salt.
Fry the Mini-Herbys in hot oil until they are nice and crispy. Then garnish a platter with the sauerkraut and the sausages.
A perfect addition is some mashed potato!
