2 large avocados (ripe, but not squashy)
½ cup of soya or other plant cream
1 tbsp margarine
1 tbsp flour
1 onion
4 cups of stock
salt and pepper
croutons

 

Avocado soup

Finely chop up the onion into small pieces and gently fry in the margarine. Keep stirring and add the flour, also keep adding more and more stock. Season with salt and pepper and keep cooking until the mixture becomes thick (at low heat).

Mash the avocados up and add these, together with the soya cream, to the mixture. Puree the mixture, but down cook it any longer.

Serve the soup with the croutons. Warm avocados are very rich. Roasted bread and smoked Wheaty VEGANSLICES is the perfect addition to the dish!
